Potato Wedges ..


Ing :

Potato - 2
Dry Methi Leaves - 1/2 Tspn
Salt - 1/2 Tspn
Vegetable Oil - 2 Tspn
Crushed Jeera - 1/2 Tspn
Red Chilly Powder - 1/4 Tspn
Fresh Lemon Juice/Orange Juice - 1 Tspn

Method:


* Preheat the oven to 375 degrees Fahrenheit.


* Wash potatoes thoroughly and remove the skin.



* Sprinkle olive oil,methi leaves,salt,red chilly powder,jeera powder and lemon/orange juice over the potatoes and toss until coated approximately 2 minutes.

* Spread the potatoes over a large baking tray, allowing space between the wedges or they will not become crispy.



* Bake at 375 degrees for about 10 minutes. When done, the wedges will be a golden brown color.  ( For crispier wedges, cook for a few minutes longer)


* Serve immediately with any sauce or ketchups.

Banana Cake ..





Ing :

Ripe Banana - 2
Unsalted Butter - 4 oz ( 1/2 Cup )
Sugar - 1/2 Cup
All purpose flour - 1 Cup
Vanilla Powder - 1/4 Tspn
Milk - 1 Tspn
Baking soda - 1/4 Tspn (Even less)
Raisins( Any Dried Fruits ) - 1/4 Cup

Method :

* Heat oven to 350° F. Grease and flour an 8 or 9 inch square pan.

* In large mixing bowl, beat butter on medium speed until light, about 30 seconds. Add sugar and beat until light and fluffy.

* In medium bowl, mash banana ( Even you can make a fine paste of banana using blender ). Add milk,Raisins and vanilla powder; stir well. Combine this mixture with butter mixture.
 
* Stir together flour, baking soda; set aside.

* Stir the dry ingredients into the first mixture until moistened. Spread in prepared pan.

* Bake for 25 to 30 minutes, or until cake springs back when lightly touched with finger.

Avocado Smoothie ..



Ing :

Avocado - 1
Cold Milk - 2 Cups
Sugar - 1/2 Cup
Vanilla Powder / Vanilla Extract - 1/4 Tspn

Method :

* Peel the skin of avocado and make small pieces of it.

* Make a fine paste of Avocado pieces in a blender ( without adding water ).

* Now add in the sugar,vanilla powder and milk into the blender and blend it for 1 minute.

* Trasnfer smoothie into serving glass and refrigerate it for 15 minutes before serving.

Ice Tea ..



Ing :

For making Ice Tea Syrup :

Tea Powder ( I used Red label Ayurvedic ) - 1 Tspn
Water - 1/2 Cup
Sugar - 6 Tspn

While Serving :

Lemon - 2
Sugar - 4 to 6 Tspn
Iced Water - 4 to 5 Cups
Ice Cubes - 3 to 4 ( Optional )

Method :

For Syrup:

* Take a vessel and put the Syrup Ingredients together and boil it for 2 to 3 minutes.

While Serving :
 
* While Serving  add 1/4 cup of syrup into a glass and add Iced water,Lemon juice and Sugar ( According to your taste),and Ice cubes.



 

Lady Finger/ Okra Curry / Bende Kai Palya ..


 



Ing:

Lady Finger - 1/4 Kg
Tomato - 2 Large
Tamarind Juice - 1/2 Cup
Salt - 1 to 2 Tspn ( according to your taste )
Jaggery - 1/2 Tspn
Turmeric Powder - 1/4 Tspn
Sliced Onion - 1/2 Cup
Vegetable Oil - 5 to 6 Tspn
Shredded Coconut - 2 Tspn
Jeera Powder - 1 Tspn
Dhaniya Powder - 1 Tspn
Red Chilly Powder - 1 to 2 Tspn ( according to your taste )
Rasam Powder / Vangibath Powder - 1/2 Tspn

Method:

* Cut the Lady finger as shown in the above recipe and keep it aside.

* Take a Pan,put the oil and heat it for few seconds then add Lady finger and saute it for 2 mins.


* Add salt,Red chilly powder and tamarind juice stir for couple of times and close the lid. ( Keep in medium flame )


* Once the Lady finger cooked well,keep it aside.


* Take a new pan and 2 Tspn of oil and heat it for few seconds then add sliced Tomato and onion for 1 minute (Until Tomato's cooked) . Add all the above mentioned masala's together and saute it for 1 min.


* Once everything mixed well add the cooked Lady finger and saute it for 3- 4 mins ( Until Evrything mixed properly ).

* Serve with Chapati,Dosa or with Rice.
