Bakery Style Bread Toast ..




Ing :
Bread slices : 8 no.s
Unsalted Butter : 3 Tspn

Ing for Masala :

Vegetable oil : 1 Tspn
Coconut oil : 1/4 Tspm
Cumin seeds : 1/2 Tspn
Chopped green chilli : 1 Tspn
Red chilli powder : 1/2 Tspn
Chopped garlic : 1/2 Tspn
Chopped onion : 1 Cup
Grated carrot : 1/2 Cup
Chopped cilantro : 1 Tspn
Chopped Tomato : 1 Cup
Turmeric powder : 1/4 Tspn
Salt : 1/4 Tspn ( According to your taste )
Sugar : 1/4 Tspn
Tomato sauce : 1 Tspn

Method to make Masala :
* In a pan heat vegetable oil and coconut oil, add cumin seeds fry it for 30 seconds.

* Add chopped onion,garlic and green chilli and fry for 1 minute in a low flame.

* Add carrot,tomato into it and saute for 2 min.

* Now add rest of the ingridients and saute for a while and switch off the flame.

* Transfer the masala into a bowl.

Method to make Bread Toast :

* Heat the skilet or griddle.

* Spread the butter into one side of the bread. And put them on a griddle and toast it.

* Take back a bread slice from griddle and spread butter to another side.

* Now spread masala on toasted side and put butter side on griddle and fry it for 30 seconds to 1 minute.


* Serve with cup of Beaten coffee or Tea.

Beaten Coffee aka Desi Cappuccino ..





Ing :

Instant coffee powder : 1 Tspn
Powdered sugar : 2 Tspn
Water : 1/2 Tspn
Milk : 1 Cup

Method :

* In a coffee mug mix coffee powder,sugar and water.




* Mix all together using spoon. Start beating the mixture in one direction.


* At first 1 to 2 minutes of beating you will find no difference in the mixture.

* Give 30 seconds rest to your hand and again start beating continuously till the coffee mixture turns into thick and creamy texture.



* After 3 minutes of continuous beating mixture looks like this.



* After 5 minutes of continuous beating mixture looks like this.



* In the meantime boil the milk.(I used whole milk)

* Slowly pour the boiled milk into coffee mug and give a gentle stirr using spoon.

* Enjoy the cup of Beaten coffee aka Desi Cappuccino..



 Some Tips :
* If you have minimum 8 to 10 minutes of time then only try this & if required adjust the sugar.

Garlic - Butter Rolls ..



Ing for dough :

All purpose flour : 1 and half cups
Active dry yeast : 1 Tspn
Sugar : 1 Tspn
Salt : 1/2 Tspn
Unsalted butter : 1 Tspn + 1 Tspn Extra for coating
Warm Water : 1/4 Cup

Method to prepare dough:

* Dissolve yeast and sugar in a warm water.

* Sieve flour four to five times and make dent in a center.

* Pour yeast mixture and mix well, if required add water and make smooth and soft dough.

* In a seperate bowl cream the butter along with salt, add this into dough and knead gently.

* Keep the dough in a big air tight container for 2 hours or till the dough raises double in size.

Ing for Garlic Butter mix :

Garlic pods : 2 no.s
Unsalted butter : 2 Tspn
Salt : 1/4 Tspn ( According to your tastebuds )
Chopped cilantro : 2 Tspn
Shredded carrot : 3 Tspn
Lemon Juice : 1/4 Tspn
Chopped Green Chilli : 2 Tspn

Method to prepare the garlic butter mix :

* Mix all the ingridients together.

How to Make & Bake the Garlic - Butter Rolls ?

* Apply butter to palm and divide the dough into 2 parts.

* Grease the baking dish with butter and keep it ready.

* Using rolling pin roll the dough and spread garlic butter mix.

* Roll this and cut it into 4 pieces.

* Place the rolls in a greased baking dish and allow it rise again for 40 minutes.

* In the meantime pre-heat the oven at 450 F for 10 minutes.

* Brush the rolls with butter and bake Garlic butter rolls for 12 minutes at 450 F.

* After baking again brush the rolls with butter and serve with ketchup.

Masala Puri / ಮಸಾಲ ಪೂರಿ ..




Ing for puri :

All purpose flour : 1/4 Cup
Semolina : 2 Tspn
Vegetable oil : 1 Tspn
Salt : 1/4 Tspn
Water : for kneading the dough

1 Cup vegetable oil for deep frying puri's.

Method to prepare puri :

* Sieve the flour and mix all the dry ingridients together in a bowl. Add little by little amount of water to this mixture, knead well and make dough. Coat the dough with a Tspn of oil and keep it in air tight container for 30 minutes.

* Knead the dough again for 30 seconds and make lemon sized balls from it.

* Dust the surface with flour and roll the balls into very thin sheet using rolling pin.
* Heat oil in a pan and fry the puri's.
                                     
Ing for Masala :

Dry Peas : 1/2 cup
Mashed Potato : 1/2 cup
Cilantro paste : 1 Tspn
Mint leaves paste : 1 Tspn
Garlic : 1 pod
Ginger : 1 inch piece
Clove : 2
Cinnamon : 1/4 inch piece
Chopped onion : 1 Tspn
Cumin seeds : 1/2 Tspn
Chat masala powder : 1/4 Tspn
Salt : For taste
Sugar : 1/4 Tspn
Tamrind pulp : 2 Tspn
Vegetable oil : 1/2 Tspn

Method for preparing Masala :

* Wash and soak the dry peas for over night or 5 to 6 hours.

* Cook dry peas and potato seperately.

* Mash potatoes and keep it ready.

* Put all the ingridients except oil,tamrind pulp,cooked peas and mashed potato into a blender. Make a fine paste from it using little amount of water.

* Heat oil in a pan and add grinded masala and stirr fry for 1 minute.

* Now add all the ingridients and 2 cups of water into pan and cook for 15 minutes in a medium flame with occassional stirr.

Garnishing for Masala Poori :

Sev : 2 Tspn
Chopped Onion : 2 Tspn
Chopped Tomato : 1 Tspn
Chopped Cilantro : 1 Tspn

Method to serve masala poori :

* Crush puris into a serving bowl.



* Pour Masala into it.



* Pour 1/2 Tspn of sweet gojju into it.



* Garnish with onion,tomato,cilantro and sev.



* Serve Hot(Dont serve with cold masala).

Easy N Quick Halwa using Microwave ..




Ing :

Corn flour : 1/2 cup
Sugar powder : 1 and half cup
Ghee : 2 to 3 Tspn
Water : 2 Cup
Cardamom powder : 1/4 Tspn
Cashews : 6 no.s
Food color : A pinch

Method :

* In a pan heat ghee and fry the cashews till it turns to golden color and keep it aside.

* In a microwave safe dish ( preferably big one ) mix the corn flour,sugar powder,food color and water without any lumps.

* Microwave this for 4 minutes.

* Take bowl out from the microwave and add cardamom powder and cashews along with ghee into it, mix well for 1 minute.

* Microwave this mixture again for 3 minutes.

*  In the mean time grease the steel plate with ghee and keep it ready.

* Take out the bowl from microwave and stirr it for 30 seconds and again microwave it for 4 minutes.

* Now pour the mixture into greased plate and keep it aside to set for 30 to 40 minutes.

* Cut halwa into desired shape and serve.



Notes :

If you dont have an microwave still you can make this halwa using gas stove.

Method :

* In a pan heat ghee and fry the cashews till it turns to golden color and keep it aside.

* Mix the corn flour,sugar powder,food color and water without any lumps in a big non stick deep skillet.

* Keep stirring the mixture until it becomes transperent(It takes approximately 8 to 10 minutes in a low flame).

* Now add in cardamom powder and cashews along with ghee into it, mix well for 1 minute.

* In the mean time grease the steel plate with ghee and keep it ready.
* Now pour the mixture into greased plate and keep it aside to set for 30 to 40 minutes.

* Cut halwa into desired shape and serve.

Mango Rice / ಮಾವಿನಕಾಯಿ ಚಿತ್ರಾನ್ನ ..




Ing :

Cooked basmati rice : 3 cups
Shredded raw mango : 1/4 cup
Shredded coconut : 2 Tspn
Ground nuts : 15 no.s
Turmeric powder : 1/4 Tspn
Salt : As per taste
Chopped cilantro : 2 Tspn
Vegetable oil : 2 Tspn
Sugar : 1/4 Tspn
Mustard seeds : 1/4 Tspn
Urad daal : 1/4 Tspn
Green Chilli : 2

Method :

* In a pan heat oil, add mustard seeds and urad daal, after 20 seconds add ground nuts. Keep frying ground nuts till it turns to crispier(about 2 mins in medium flame), add turmeric powder,green chilli and shredded coconut,mix once and switch off the flame.

* In a separate bowl mix rest of the ingridients together and add above mixture.

* Mix well and serve with Raita.

Besan Unde / Besan Laddoo / Gram flour Laddoo ..



Ing :

Gram flour : 1 Cup
Powdered sugar : 3/4 Cup
Ghee : 1/4 Cup
Cardamom powder : 1/4 Tspn
Cashews : 10 Nos

Method :

* Take 1/2 a tspn of ghee and roast the cashews till golden brown and keep it aside to cool.

* Sieve the besan flour and keep it ready to use.

* In a big mixing bowl, combine the powdered sugar,cardamom powder and roasted cashew's. mix well and keep aside.
* Heat the remaining ghee in a non stick pan. Add the besan flour little by little and mix it.
 ( The consistency at this point should be paste like and should drop easily from the spoon. If not, add 1 to 2 tspn of ghee till you reach this consistency. )
Keep frying this mixture on low flame till it turns golden brown or till u get the aroma resembles of mysore pak.

* Switch off the flame and mix this with other dry ingredients using spoon.

* Leave this mixture till warm and then shape into laddoo's.

Urad daal vaDa / ಉದ್ದಿನ ವಡ ..




Ing :

Urad Daal : 1/2 Cup
Shredded Ginger : 1/2 Tspn
Chopped Green Chilli : 1/2 Tspn
Salt : 1/4 Tspn
Water : 1 Tspn
Shredded Coconut : 1 Tspn

4 cups of vegetable oil for deep frying

Method :

* Wash and soak the urad daal for 3 to 4 hours (not more than 4 hours ).

* Drain urad daal completly,using a blender make a very fine paste by adding only 1 Tspn of water.

* In a bowl mix all the ingridients together.

* Heat oil.

* In a small bowl keep cold water.

* Soak your hand in cold water and take a big sized dough, press very gently and make small hole in it.

* Carefully transfer this into hot oil and deep fry them in a middle flame.

* Serve with sambhar or with chutney.

Banana Buns/ಬಾಳೆಹಣ್ಣಿನ ಬನ್ಸ್ ..



Ing :

Over riped mashed banana : 1/2 Cup
Whole wheat flour : 1 Cup
Yogurt : 1/4 Cup
Sugar : 1 Tspn
Salt : 1/4 Tspn
Oil : 1 Tspn

For frying buns :
Vegetable oil : 2 and half cups

Method :

* In a bowl add mashed banana,yogurt,salt and sugar. Mix well for 2 minutes.

* Sieve whole wheat flour and mix it into above mixture to make a dough. Knead well and apply oil on dough and again knead for 30 seconds and keep the dough in a air tight container for overnight.

* Heat vegetable oil.

* Once again knead the dough for 1 minute and make lemon sized balls from it.

* Using rolling pin roll it into poori size.

* Deep fry the buns in medium flame.

* Serve hot with any chutney or serve as a desert.

Bread Rolls ..




Ing :

All purpose flour : 1 and half cups
Active dry yeast : 1 Tspn
Sugar : 1 Tspn
Salt : 1/2 Tspn
Unsalted butter : 1 Tspn + 1 Tspn Extra for coating
Warm Water : 1/4 Cup

Method :

* Dissolve yeast and sugar in a warm water.

* Sieve flour four to five times and make dent in a center.

* Pour yeast mixture and mix well, if required add water and make smooth and soft dough.

* In a seperate bowl cream the butter along with salt,  add this into dough and knead gently.

* Keep the dough in a big air tight container for 2 hours or till the dough raises double in size.

* Once the dough doubles in size,knead again. Using rolling pin roll it  into a round shape ( chapati shape ). Brush with butter and spread your favorite chutney ( i used cilantro chutney ) on it.

* Roll this and cut this into 6 eqaual portions.

* Grease the baking dish with butter, transfer the rolls into it. Cover the baking dish and keep it in a warm place for 45 minutes.

* Pre-heat the oven to 450 F for 10 minutes.

* Bake the bread rolls for 12 minutes at 450 F.

* Enjoy the hot bread rolls with cup of coffe or tea.
