Carrot Mousse ( Eggless ) ....






Ing :

Carrots : 2 big sized ( 1 and half cups )

Unsalted Cashews : 1/2 Cup
Milk : 1 Cup
Sugar : 1/2 Cup ( Add more if you like more sweet consistancy of mousse )

Vanilla Powder : 1 oz

Method :

* Cut the carrots into cubes or circles.


* Take a vessel and add chopped carrots,cashews and milk into it. Cook this in a pressure cooker till 2 whistles and switch off the flame.

* Once the above cooked mixture turns to room temperature blend it into a very smooth paste and tranfer to a big bowl.

* Now using cake beater machine, beat the above mixture for 2 to 3 minutes.

* Add Sugar and Vanilla powder into above mixture and mix well.

* Transfer the mousse into serving bowl and decorate with Cashews.

* Refrigerate the mousse in freezer for half an hour and serve.

Garlic Buns / ಬೆಳ್ಳುಳ್ಳಿ ಬನ್ಸ್ ..

 
 
Ing :
All purpose flour - 1 and 1/2 Cup
Active dry yeast - 7 oz ( 1/2 Tspn )
Milk - 1/4 Cup (+ 1 Tspn for brushing )
Water - 1/4 Cup
Vegetable oil - 1/8 Cup ( + 1/2 Tspn for greasing the baking tray )
Sugar - 1/2 Tspn
Salt - 1/3 Tspn
Chopped garlic - 1 Tspn
Chopped green chilli - 1 Tspn
Unsalted butter - 1 Tspn

Method :

* Sieve the all purpose flour.

* Take a large bowl and add the flour into it, then make a dent in the centre of the flour.


* Heat the milk and water together till it turns into luke warm,add sugar and switch off the flame. Now add yeast to it and mix well till yeast dissolve completely.

* Pour this mixture in the dent.

* Add vegetable oil,salt,chopped garlic into dent and gather to make a soft dough.


* Apply oil ( 1/4 Tspn ) gently over the dough.

* Cover the vessel with a cling wrap with enough room for the dough to rise.

* Keep the dough in a warm place for an hour.

* After an hour the dough should have raised well ( Actually at this point of time dough has doubled from original size ).

* Grease the baking tray with vegetable oil and keep it aside.

* Punch down the dough very gently and make 10 equal sized balls from it.

* Brush the bun balls with a milk and gently transfer it to a greased tray.

* Pre heat the oven at 375 F for 10 minutes.

* Bake the buns in a pre heated oven at 375 F till 12 to 15 minutes ( Or till top of the bun turns into golden color )

* Once the buns are done , brush the buns with butter and serve it with cup of coffe or tea.


IMPORTANT NOTES :
* The dough should be very soft,if its stiff and tight you may not get soft buns.
* If your dough doesnt rise then your yeast is not active,you may not get soft buns either.

Keep the tray in a middle rack of the oven.

Chakkuli / Muruku - ಚಕ್ಕುಲಿ ..




Ing :

Idly rice - 2 Cups
Urad daal - 1 Cup

Splitted daliya - 1/4 Cup
Sesame seeds - 1/2 Tspn
Salt - According to your taste ( Iused 1/2 Tspn )

Warm Vegetable oil - 2 Tspn
Water - 1/2 Cup

Deep Frying :

Vegetable oil - 1/2 Litre

Method :

* Dry roast the Urad daal and splitted daliya seperately, till they turns to golden brown color.

* Soak the rice in cold water for 2 hours. Drain the water and blend the soaked rice into smooth paste by using little amount of water.

* Once urad daal and daliya split turns into room temperature make a fine powder of them.

* Take a big bowl and add the rice paste , urad daal and splitted daliya powder , warm oil ( heat the oil in a kadayi for 2 mins ),salt and sasame seeds. Mix well and make dough like a chapati dough.

* Take a kadayi and transfer the oil and heat for 5 minutes in a medium flame.

* Make chakkulis using chakkuli maker and keep them on paper.

* Carefully transfer the chakkuli's into hot oil and deep fry them until they turns into golden color.

Peach Cobbler..


Ing :
Peaches : 4
Sugar : 1 Cup ( I used granulated sugar )
Water : 1/2 Cup
Unsalted butter : 4 oz / 1 Cup
Self rising flour : 1 Cup
Milk : 1 Cup


Method :
* Preheat oven to 350 degrees F.

* Combine the peaches(peel off the skin and make it slices), 1/2 cup sugar, and water in a saucepan and mix well. Bring to a boil and simmer for 10 minutes in a low heat. Switch off the flame and keep it aside.
* Put the butter in a baking dish and place in oven to melt.

* Mix remaining 1/2 cup sugar, flour, and milk slowly to prevent clumping.

* Pour fruit mixture over melted butter. ( Do not stirr. Spoon fruit on top, gently pouring in syrup)

* Batter will rise to top during baking.

* Bake for 30 to 35 minutes.

Dry fruit rolls..



Ing :

Seedless Dates : 30
Almonds : 10
Cashews : 10

Method :

* In a blender make a fine paste of dates without using water / milk. ( Make small piece's from dates, before grinding it..so that it helps you to form a fine paste easily..)

* Make a coarsed powder of almonds and cashews in a blender.

* Take a big vessel and add powdered cashews and almonds and also date's paste. Make dough from this mixture, and transfer the roll into a thin plastic bag and role it.

* Freeze the rolled dates in refrigerator till 2 hours.

* Cut the freezed dates into desired shapes and serve..
