Sago Idly

 



Method :

* Wash 1/2 cup sago pearls for 3-4 times in cold water,drain the water completely.

Wash 1 cup of idly rava for 2 times in cold water, drain the water completely.

* Take a big bowl, add in sago pearls and idly rava, 3/4 cup thick curd/yogurt,1/2 cup of cold water and 1/2 teaspoon salt, mix everything nicely and let it ferment for 10 hours.

* Grease the idly plate with ghee and keep it ready.

* In a pressure cooker add 2 cups of water and switch on the stove.

* Add 1/4 cup chopped dill leaves to fermented idly batter and mix gently.

* Add 1/8 tea spoon of baking soda, mix quickly and pour the batter to idly plates and steam cook the idlies for 20 minutes.

Serve it with red chutney.

Recipe for red chutney :

* In a pan add in 1/2 teaspoon of coconut oil, once oil is warm, add in 1/4 cup sliced onions,1/2 teaspoon chopped garlic,1 green chilli, 1 dried Kashmiri chilli, small piece of tamarind roast until onion turns to pink colour.

Add in 1 table spoon of Daria Dal (split roasted gram /putaani), 1/2 cup coconut, 1/2 teaspoon salt.

Switch off the stove, and let everything cool down, then in small blender jar, blend everything with 1/4 cup of water.

Transfer chutney into a bowl and add tempering. ( Heat coconut oil, add in mustard seeds and asafoetida).

Fruit custard

 


Custard recipe :

In a small bowl mix 1 table spoon of cornstarch with 2 table spoon of milk and keep it ready.

Add 3 cups of milk into a saucepan, once milk is boiled lower the flame, add in 1/2 cup sugar ,  1/2 teaspoon fresh grounded vanilla powder (flavor of your choice) and cornstarch milk. Continuously stir and cook the mixture to avoid lumps in custard.

Cook this until custard is thick pouring consistency.(note: it thickens once it's cooled down )

Switch off and let it cool down completely.

Fruit custard recipe :

In a big vessel, add in 1/2 cup of chopped oranges, 1 cup chopped Bananas,1 cup chopped apples,1/2 cup chopped kiwis, 1/4 cup pomegranate seeds,1/2 cup chopped grapes, 1/4 cup chopped dates, 1/4 cup chopped cashews.

Add in custard,1 cup cold milk, 1 table spoon honey.

Mix everything and garnish with chopped pistachios and chopped dried apricots !

Serve chilled :)



Notes: 

Citrus fruit is must in fruit custard as it balance the taste.

Use fresh fruits.

You can use your favourite fruits.

Fuljar Soda..




In a small mixer jar, add in 1/4 cup fresh mint leaves, 1/4 cup fresh cilantro, 2 green chillies, 1 inch chopped fresh ginger, 4 table spoon sugar, 3/4 teaspoon salt, 1/2 cup fresh lemon juice, 1/4 teaspoon chat masala. Blend it into fine paste without adding any water.

Sieve the juice and transfer it to serving glass (1/4 cup of juice to each serving glass)

Add in chilled sparking water or fresh soda (3/4 cup) and few ice cubes to serving glass and serve immediately.



Notes:

Increase chillies if you like spicy soda, same rule applies to sugar, you can increase if you like sweet soda.

Use fresh ingredients.
