Orange & Chocolate cake ..

 



Ingredients & Method :

Fresh orange juice : 1/4 cup
Orange zest : 1 teaspoon
Yogurt : 1/2 cup
Milk :  2/3 cup
Butter : 1/2 cup
Bicarbonate of soda : 1 teaspoon
Sugar : 1 cup
Plain flour / Maida : 1 and 1/2 cups
Cocoa powder : 1/2 cup
Salt : 1/8 teaspoon

Grease and dust cake tin with butter and plain flour and keep it ready to use.

Start to preheat the oven at 190 degrees.

In a small sauce pan add milk and butter and cook in low flame until butter completely melts. Switch off the stove.

In a big bowl add in yogurt,sugar,orange juice and orange zest, mix it until sugar completely dissolves. 

Sieve together the flour,cocoa powder, bicarbonate of soda and salt. (This is dry ingredients)

Add 1/4 measurement of dry ingredients into yogurt and juice bowl, fold ( do not mix ) repeat this step until all the dry ingredients mixes with yogurt and juice mixture.

Next add 1/4 measurement of hot milk + butter mixture to the cake batter, gently fold and repeat the process until everything mixes well.

Immediately Pour the batter into cake tin, tap the tin for 4-5 times, and bake it in preheated oven (190 degree) for 20 minutes. 
Reduce the oven temperature to 120 degrees and bake for another 25 minutes or until the cake is baked!

Once cake is baked, take it out from the oven and allow it to cool down for 4-5 minutes, then tap the tin for 3-4 times, and invert the cake and allow it cool down before slicing it.

Notes :

* Use freshly squeezed orange juice.
* Use freshly grated orange zest.
* Make sure to fold the ingredients, do not mix !
* Don't forget to tap the tin before keeping it in oven.

Ghee residue cupcakes..



  • Ingredients and method :

  • Ghee residue : 2 tablespoons
  • Milk : 1 cup
  • Sugar : 1/2 cup
  • Cardamom powder : 1/2 teaspoon
  • Salt : small pinch
  • Self raising flour : 1 and half cup
  • Chopped almonds : 2 tablespoons

  • Method :

  • Heat milk along with the sugar,ghee residue and cardamom powder, mix and heat until sugar dissolves completely. Switch off the flame.
  • When milk temperature is warm, sieve and add self raising flour and salt , use cut and fold method and mix it well, make sure no lumps are formed.
  • Preheat oven to 150 degree for 5 minutes.
  • Pour cupcake batter to cups. (Just fill half, because it needs space to rise)
  • Garnish with chopped almonds.
  • Bake at 150 degree for 10 minutes, reduce the temperature to 120 and bake for 20 minutes or until it's baked! (Use a toothpick to check, when you insert a toothpick in the middle of the cupcake it needs to come out without any batter attached to it)
Notes :

If you don't have self raising flour, just mix 1 and 1/2 teaspoon of baking powder and 1/8 teaspoon of baking soda to plain flour /maida,Mix and seive .

Garnish with your favourite dry fruits.
Its perfect for evening tea, it's light and moist cupcake!

Orange pastry ..


Ingredients for pastry :

Orange buttercream frosting : 2 cups
Orange loaf cake : 1
Orange slices for garnish ( optional)

Method to arrange pastry :

Slice/cut orange loaf cake into 2 parts.
Apply buttercream frosting in between the cake slices and above the cake slice, garnish with fresh orange slice, ready to serve !!



Ingredients for orange buttercream frosting :

Unsalted butter : 100 gm ( butter needs to be at room temperature)
Powdered sugar : 1/2 cup ( increase if you like more sweet frosting )
Corn starch: 1/2 tablespoon
Fresh orange zest : 1 teaspoon
Fresh orange juice : 1 tablespoon
Salt : one small pinch

Method :

Beat the butter for 1 minute , add in sugar and cornstarch, beat it for 1 minute, add half quantity of orange juice and salt and beat again for 1 minute, then add remaining orange juice and beat for 1 minute lastly add in zest and beat for 30 seconds.

This is mildly sweet frosting, so if you want increase sugar powder.
I use a hand blender for beating/making frosting.

Orange cake loaf recipe :



This recipe I learned from my best friend Vani, and it's a super simple recipe with delicious flavour!!

Ingredients for orange cake loaf :

Self raising flour(check notes for alternative) : 1 and half cups
Sugar : 1/3 cup
Oil : 1/2 cup
Hot milk : 1/2 cup
Curd : 1/4 cup
Fresh orange juice : 1/4 cup
Fresh orange zest : 1 tablespoon
Salt : one pinch

Method :

Sieve the flour for 2 times and keep it ready.
Grease the baking tin with butter and flour.
Preheat the oven at 160 degree.

Take a big bowl, add in curd,salt and sugar beat it until sugar dissolves.

Add in orange juice,orange zest and oil and mix until everything mixes properly.

Add 1/4 cup flour at a time to the above mixture and mix gently.

Once everything mixed, add in 2 tablespoons of hot milk(make sure to use hot milk) at a time and mix gently.

Pour the batter to baking tin and tap the tin for 4-5 times and bake at 160 degree for 10 Minutes and reduce the temperature to 120 degree and bake until cake is well cooked!

My cake took around 35 minutes for baking, each and every oven temperature differs so keep an eye on cake after 25 minutes.

Take the cake out from oven and allow it to cool down for 10 minutes and invert it, keep it in a cooling rack until it cools down completely, then cut and serve as it is or make orange pastry!

Notes :

Self raising flour :
If you don't have self raising flour, you can use 1 and half cups of plain flour / maida, 1 and 1/2 teaspoon of baking powder and 1/8 teaspoon of baking soda, mix these three ingredients together and sieve it for 2 times, in this way everything mixes properly.

Make sure to tap the tin after you pour batter, in this way there will be no air bubbles inside the cake.

Please make sure to use hot milk.

Orange zest = grated orange peel.

Use a toothpick to check whether cake is baked or not.

Each and every oven temperature differs,so bake accordingly.

Use the exact measurement.

Eggless whole wheat gulab jamun cake!






Wish you all a Merry Christmas and Very happy new year 2017!

This Gulab jamun cake is a delicious mild sweetened cake and you can enjoy as dessert or a tea time snack!
And i used whole wheat flour, And  no eggs or no all purpose flour (Maida)..

This cake is very easy to prepare just follow the method and use the right measurements! (This is the basic you need to follow while baking)

And feel free to get back to me if you have any doubts in the recipe!

I adopted this recipe from one of the baking group and adjusted accordingly.

Here is a recipe:

Ingredients :

MTR Gulab jamun mix : 3/4 cup
Whole wheat flour : 3/4 cup (I used stone ground wheat flour)
Sugar : 3/4 cup
Milk : 1 cup (boiled and cooled milk it should be at room temperature)
Vegetable oil : 1/4 cup (Any flavorless or odor less oil)
Baking powder : 1/2 tea spoon
Baking soda : 1/4 tea spoon
Cardamom pods : 8

Method :

* Preheat the oven at 180 degree.

* Grease and dust the cake pan (I used loaf tin).

* In a small mixer jar (it should be dry) add sugar and seeds of cardamom(peel the skin and use the seeds) and make a powder.
(Using fresh seed gives more aroma and it enhances the taste)

* To the same jar add in gulab jamun mix and grind the powder for 30 seconds.
(Eventhough its already in powdered form but it ensures no lumps were found in jamun mix)

* Take a big bowl and sieve together the whole wheat flour,baking powder and baking soda for 3 to 4 times.
(3-4 times sieving gives cake a good texture)

* Now add in the sugar mixture,jamun powder to whole wheat flour, take a dry spoon and mix it nicely for 2 minutes.

* Add in the oil and mix properly.

* Gradually add milk and fold the batter gently and make sure there were no lumps found!

* Immediately pour the cake batter into cake tin and tap the tin on work place for 2 times and put it in the oven.
(tapping the tin: it ensures no air bubbles in the batter while transferring from bowl to cake tin)

* Bake at 180 for 35 to 40 minutes. 
(Temperature in every oven is different so keep checking after 30 minutes by pricking the center of the cake using tooth prick! )

* My Cake was beautifully baked at 39 minutes! But i wanted golden crust so baked till 43 minutes!!

Eggless Carrot Cake !!



Ingredients :

Sweetened Condensed Milk - 1/2 tin
Unsalted Butter - 50 grams + 1/4 tea spoon for greasing
All purpose flour - 100 grams + 1 tea spoon for greasing cake tin + 2 table spoon to coat carrots
Baking Powder- 1/2 tea spoon
Soda Bicarbonate - 1/2 tea spoon
Cardamom powder - 1 tea spoon
2 cups- Grated carrots
Milk - 2 table spoon

Method :

* Grate Carrots and add in 2 table spoon of flour and mix it well.

* Preheat the oven to 180 C.

* Grease the baking dish with butter and all purpose flour.

* In a seperate bowl sieve together the all purpose flour,baking soda and baking powder.

* In a big bowl microwave butter for 20 seconds,take it out and add in condensed milk and mix it well.

* Now add 2 table spoon of flour mixture at a time to condensed milk and butter mixture and mix it well,repeat the same until all flour is mixed into this mixture.

* Add in carrots,cardamom powder and milk,mix this with batter.

* Transfer the batter into greased baking dish and bake at 180C for 12 mins or until cake is done.
(Use toothpick to check if cake done or not,if the toothpick comes out clean cake is ready,or else bake again for 2 more minutes)

Rustic Peach Galette ..



Ing :

Ing for Crust :

All purpose flour : 1 cup (extra for rolling)
Unsalted butter : 1/4 cup (at room temp.)
Salt : A pinch
Powdered sugar : 1 tea spoon
Ice cold water : 1/8 cup (as needed to make dough)

Ing for Filling :

Sliced peaches : 1 cup
Powdered sugar : 1/4 cup
Cloves powder : 1/4 tea spoon (You can either use cinnamon powder)
Corn starch : 1 tea spoon
All purpose flour : 1 tea spoon
Dry ginger powder : 1/4 tea spoon

For Crust Brushing :
Powdered sugar : 1 table spoon
Unsalted melted butter : 2 table spoon
Cloves powder : A pinch

Method :

Method to make Crust :


* In a medium bowl, whisk together flour, sugar, and salt. Add butter into flour and mix until mixture has a crumbly consistency.

* Now add ice water, 1 tablespoon at a time, and mix with a wooden spoon(must) until dough just holds together. DO NOT OVERWORK ON DOUGH.

* Wrap dough in a plastic wrap and refrigerate for atleast 10 minutes.

Method to make Filling :

* In a medium bowl, whisk together sugar, flour,ginger powder and clove powder. Add in peaches and toss mixture until peaches are coated very well.

Method to make Brushing :

* Mix all the listed ingridients together and keep it ready to use.

Method to Assemble :

* Pre heat the oven to 180 C.

* Remove the dough from the refrigerator and using roling pin roll the dough to 1/8 inch thickness circular shape. (Roll like chapathi)

* Pour the filling in center and assemble it giving 1 to 1.5 inch border space.

* Fold the 1 inch border of dough over the edges of the peaches and refrigerate for 15 minutes.

* Brush the Galette with brushing mixture.

* Bake Peach Galette for 25 to 30 minutes in a pre heated oven or until crust is lightly browned.

Spicy Semolina Cake ..



Ing :

Semolina : 1 cup (no need to roast the semolina)

Plain yogurt : 1 cup
Turmeric powder : 1/8 tea spoon
Baking soda : 1 tea spoon
Luke warm water : 1/4 cup
Salt : 1 tea spoon(Adjust accordingly)
Sugar : 1/2 tea spoon
White sesame seeds : 1 tea sppon (For garnishing)

For tempering :
Vegetable oil : 2 table spoon
Mustard seeds : 1/2 tea spoon
Cumin seeds : 1/4 tea spoon
Finely chopped onion : 1/2 cup
Finely chopped green chilli : 1 tea spoon(Adjust accordingly)
Finely chopped cilantro : 1 table spoon
Finely chopped french beans : 1/4 cup
Grated ginger : 1/2 tea spoon
Frozen green peas : 1/4 cup
Grated Carrot : 1/2 cup
Shredded coconut : 2 table spoon
Asafoetida : A pinch
Method:

* Preheat the oven to 375 F and grease a baking pan or bread loaf(I used bread loaf) with vegetable oil.

* Take a large bowl and mix together the semolina, yogurt, salt, sugar. Mix it until everything combines very well and let it sit aside.

* Heat the vegetable oil in a nonstick pan, add in the mustard seeds,cumin seeds, onions, asafoetida green chillies, ginger and saute for 2 minutes in a low flame.

* Now add the carrot, french beans, cilantro,shredded coconut and green peas and saute for another one minute. Switch off the flame.

* Add this sauted mixture into semolina mixture and mix it very well. And also add 1/4 cup of water to the mixture.(Do not add more water nor less water)

* Now the tricky part, add in the baking soda,mix it as quickly as possible with batter and pour the batter into the greased pan.

* Garnish the top with white sesame seeds and place it in the middle rack of oven.

* Bake this for 30 to 35 minutes, or until toothpick inserted in the centre comes out clean.

* Remove baked cake from the oven and allow it to cool for 5 minutes.

* Slice the cake and serve as it is or along with any spicy chutney.

* This is perfect for Breakfast or for Tea time snack.

Dates Cake ( Eggless ) | ಖರ್ಜೂರದ ಕೇಕ್ ..


 
 Ing :

Seedless dates : 18
All purpose flour : 1 Cup
Sugar : 3/4 Cup
Vegetable oil : 1/2 Cup
Milk : 3/4 Cup
Baking powder : 1/2 Table spoon

Method :

* Heat milk and dates for few minutes or microwave them for 2 minutes so that dates becomes soft and it will be helpful while in grinding. Let it cool for 5 minutes.

* Add sugar into blender and blend it for 30 seconds then add in the dates along with milk and grind them to a smooth paste.

* Take a big bowl and add vegetable oil and paste of dates(Dates+Sugar+Milk) mix well for 2 to 3 minutes using a fork.

* Sieve all purpose flour and baking soda  together for 2 times.

* Grease the baking dish with butter and dust it with all purpose flour.

* Add the all purpose flour one table spoon at a time to dates mixture and mix it very gently.Make sure that there will be no lumps in cake batter.

* Preheat the oven at 350 F for 10 minutes.

* Pour the cake batter into greased baking dish. Tap the baking tray very gently for few times so that there will be no air bubbles.

* Bake the cake in a preheated oven for 15 minutes.

* After 15 minutes reduce the oven heat to 300 F and again bake it for 15 minutes or till a knife inserted in the middle of the cake comes out clean.

Eggless Orange Cake ..

 
Ing :

All purpose flour : 1 & 1/4 cup
Sweetned condensed milk : 1 cup
Vegetable oil : 1/2 cup
Fresh orange Juice : 1/2 cup (Cut orange in the middle and squeeze it to get juice)
Powdered Sugar : 3 tbsp
Lemon Juice : 1 Tea spoon
Baking Powder : 1 Tea spoon
Baking soda : 1/2 Tea spoon
Orange Zest : 1 Tea spoon ( Grate the orange peel-just orange color part,do not use white part)


For greasing the baking dish :

Unsalted butter : 1/4 Tea spoon
All purpose flour : 1/2 Tea spoon


Method :

* Sieve all purpose flour,baking powder,baking soda and powdered sugar, two to three times and mix it again using fork to ensure even mixing. (This is very IMPORTANT step)
* In a big bowl mix the condensed milk,orange juice,oil and lemon juice and mix it very well using hand mixer or a fork.

* In the mean time pre heat the oven to 350 F for 10 minutes and grease the baking dish.

* Now pour the wet ingredients spoon after spoon into the above mixture.Gently mix the mixture until you get a smooth and uniform mixture without lumps using hand mixer or a fork.
* Add orange zest into the mixture and mix it well.
* Pour cake mix into a greased baking dish and tap the dish very gently for 4 to 5 times to avoid air bubbles in cake.
* Bake cake batter for 25 minutes or until the toothpick inserted in middle of the cake comes out clean.
* Immidietly take out the cake from oven, and let the cake to cool down for 5 minutes then tap the dish gently for 2 to 3 times and invert the cake over a cooling rack and let it cool for 15 minutes.
* Cut and serve the spongy orange cake or use it as base for any deserts.

Banana Cake ..





Ing :

Ripe Banana - 2
Unsalted Butter - 4 oz ( 1/2 Cup )
Sugar - 1/2 Cup
All purpose flour - 1 Cup
Vanilla Powder - 1/4 Tspn
Milk - 1 Tspn
Baking soda - 1/4 Tspn (Even less)
Raisins( Any Dried Fruits ) - 1/4 Cup

Method :

* Heat oven to 350° F. Grease and flour an 8 or 9 inch square pan.

* In large mixing bowl, beat butter on medium speed until light, about 30 seconds. Add sugar and beat until light and fluffy.

* In medium bowl, mash banana ( Even you can make a fine paste of banana using blender ). Add milk,Raisins and vanilla powder; stir well. Combine this mixture with butter mixture.
 
* Stir together flour, baking soda; set aside.

* Stir the dry ingredients into the first mixture until moistened. Spread in prepared pan.

* Bake for 25 to 30 minutes, or until cake springs back when lightly touched with finger.
